An incredibly simply chicken enchilada recipe that will a crowd-pleaser!

 2 cups Chicken Cooked & Shredded
 10 oz Can of Rotel
 4 oz Can of Diced Green Chiles
 1 cup Shredded Monterrey Jack Cheese
 ¼ Bunch Cilantro Chopped
 10 6" Tortillas
 1 Batch of Homemade Enchilada Sauce

Preheat oven to 350 degrees

Combine cooked chicken, diced tomato chile mixture (drained), green chiles, monterrey jack cheese, and roughly cilantro into a large bowl.

In each tortilla fill with about ⅓ cup of the chicken mixture. Roll up each tortilla into a cigar shape. Get out a casserole dish and evenly coat with non-stick spray. Place rolled tortillas into a casserole dish.

Now that all enchiladas are in the dish, pour enchilada sauce evenly on top.

Bake for 30 minutes.
